Cooking Instructions – Rolled Sirloin
Remove the rolled sirloin from the fridge 60 minutes before cooking to allow it to come up to room temperature.
Preheat the oven to 220°C (200°C fan). Season the joint generously with salt just before cooking. Heat a large ovenproof pan with a little oil and sear the joint on all sides until well coloured — this helps develop flavour.
Transfer the pan to the oven and roast at 220°C for 20 minutes, then reduce the temperature to 180°C (160°C fan) and continue cooking.
Cooking times (per 500g after the initial 20 minutes)
Rare: 10 minutes
Medium rare: 12 minutes
Medium: 15 minutes
Medium well: 18 minutes
Once cooked, remove from the oven, cover loosely with foil and rest for at least 20–30 minutes before carving. Proper resting is essential for a tender, juicy result.
Carve into generous slices and serve with traditional sides.
