About this cut

Sirloin is taken from the lower back of the animal and is known for its natural beefy flavour and fine texture. Slightly firmer than fillet but full of character, it’s a versatile steak that responds beautifully to quick, high-heat cooking and careful resting.

Cooking Instructions – Sirloin Steak

Remove the sirloin steak from the fridge 30–40 minutes before cooking to allow it to come up to room temperature.

Season generously with salt just before cooking. Heat a heavy pan over a high heat and add a small amount of oil. Once hot, place the steak in the pan and cook without moving to develop a good crust.

Cooking times (approx. 250–300g steak)

Rare: 2 minutes per side

Medium rare: 2½ minutes per side

Medium: 3 minutes per side

Medium well: 4 minutes per side

Add a knob of butter, a crushed garlic clove and a sprig of thyme for the final minute if you wish, basting the steak as it cooks.

Once cooked, remove from the pan, place on a warm plate and rest for at least 5–7 minutes. Resting is essential to allow the juices to redistribute and keep the steak tender.

Slice across the grain and serve simply.
