About this cut

Chateaubriand is taken from the thickest part of the fillet, offering a melt-in-the-mouth texture and elegant finish. Best cooked whole and sliced at the table, it’s a timeless choice for those who appreciate simplicity and quality.

You’ll receive an email once your Chateaubriand is ready to collect from the deli.

Cooking Notes – Chateaubriand

For best results, remove from the fridge 30–40 minutes before cooking to allow the beef to come up to room temperature.

Season generously with salt just before cooking. Sear the Chateaubriand in a hot pan with a little oil until well coloured on all sides, then transfer to a preheated oven at 200°C (180°C fan).

As a guide, cook for 18–22 minutes for medium rare, turning once halfway through. Once cooked, remove from the oven, cover loosely with foil and rest for at least 10 minutes before slicing.

Slice thickly and serve simply — this cut is all about tenderness and clean, elegant flavour.
