Sear the Chateaubriand in a hot pan with a little oil until well coloured on all sides, then transfer to a preheated oven at 200°C (180°C fan).\u003c\/p\u003e\n\u003cp\u003eAs a guide, cook for 18–22 minutes for medium rare, turning once halfway through.
